1) Steam or simmer (or roast), till tender:
– 1 lb beets (about 3 medium sized), peeled and chopped
Let cool.
2) Blend till smooth:
– the cooled beets
– 1 15-oz can chickpeas, drained and rinsed
– 2 Tbsp. tahini
– 1 tsp. cumin
– juice of 1/2 lemon
– 1 garlic clove, minced
– salt, to taste
