350 deg. F., 25 to 30 minutes
8 x 4-inch glass baking dish, greased

In a medium-size bowl, blend well:
1/2 cup plus 3 T. flour (unbleached white;
or half unbleached white and half whole wheat pastry;
or gluten-free mix, see recipe in recipe list)
scant 1/2 cup white sugar
5 T. unsweetened cocoa powder
1 1/2 tsp. baking powder
1/4 tsp. baking soda
1/4 tsp. salt

In a large bowl, combine:
2 1/2 T. veg. oil (canola or olive)
1 egg
1/2 tsp. vanilla extract
1/2 cup warm water
1 tsp. apple cider vinegar

Pour the flour mixture into the bowl with the wet ingredients, and combine just until evenly mixed.
Bake until centre is dry (insert a toothpick or knife in the centre to test.)
Optional: make a sugar & lemon rind glaze.
