Couscous with apples and raisins


Lightly toast (in 300 deg. oven, 7 or 8 minutes):
1/3 cups toasted raw almonds

Combine, and bring to a simmer in a medium size pot:
2 cups apple juice or cider
1 cup water

Add:
1 cup couscous grain

When mixture comes to a simmer again, reduce heat to low, add almonds and:
1 cup dark raisins

Cover, and let simmer for 20 minutes.
