Rinse:
1 3/4 cups dry yellow split peas
Put peas in a medium large pot.
Add:
8 cups water or stock
Bring to a low boil, then turn down heat and simmer for 45 minutes,
with pot half covered.

While peas are cooking, sauté, until lightly brown and tender:
2 T. sunflower or canola oil
1 cup yellow onion, diced
1 1/2 T. garlic cloves, minced (4 to 5 cloves)
1 T. ginger root, peeled and minced
Add onion mixture to split peas (when peas are finished cooking).
Add to pot, and simmer, covered, for 30 minutes:
1 1/2 cups fresh kale, chopped. (Or spinach; add after 15 minutes.)
1/2 tsp. ground cumin
1/2 tsp. ground coriander
1/2 tsp. turmeric
pinch cayenne pepper (optional)
salt to taste
