Red lentils with yogurt sauce

Makes 4 to 6 servings



In large pot, sauté until tender:

1 T. olive oil
1 large yellow onion, diced, (about 1 cup)

Add, and sauté 1 more minute:

2 garlic cloves, minced
1 tsp. fresh ginger, minced
1/4 tsp. garam masala
2 tsp. curry powder
1 med. size carrot, diced, (about 3/4 cup)

Add and simmer for about 8 minutes (until water fully absorbed
and lentils are very soft):

2 3/4 cups vegetable broth
1 1/2 cup dry (uncooked) red lentils (rinsed and drained)

Yogurt sauce

3/4 cup plain yogurt
1 T. lime juice
1 minced green onion

- - - - - - - - - -

Optional:
Top with some chopped cilantro
