Apple cake

In small bowl, combine well:

3/4 cup whole wheat pastry flour
1/4 cup unbleached all-purpose flour
1 tsp. baking powder
1/4 tsp. baking soda
2 T. quick rolled oats
1 T. ground flax seed
1 T. wheat germ
3/4 tsp. ground cinnamon

In medium large bowl, beat together:

1 egg
1/3 cup brown sugar

Add at same time, then blend thoroughly (beating slightly):

1/4 cup canola oil
1/3 cup plain soy milk
1 T. orange juice
1 tsp. vanilla
2 T. water

Spread evenly in a greased 8" or 9" square baking dish:

about 4 1/2 cups baking apples (cortland, empire, etc.; about 5 med.-size),     peeled, chopped into 1" slices or chunks

Pour the flour mixture into the bowl with the wet ingredients, and combine just until evenly blended (don't overmix).

Pour batter fairly evenly on top. It doesn't have to be spread evenly.
When baking, any little patches will be filled when the batter rises.

350 deg., 35 to 40 minutes, until cake is brown on top and apples bubbling.
