In small bowl, combine well:
3/4 cup whole wheat pastry flour
1/4 cup unbleached all-purpose flour
1 tsp. baking powder
1/4 tsp. baking soda
2 T. quick rolled oats (alt: 3 T.)
1 T. ground flax seed
1 T. wheat germ
3/4 tsp. ground cinnamon

In medium large bowl, beat together:
1 egg
1/3 cup brown sugar (alt: 1/4 cup)
Add at same time, then blend thoroughly (beating slightly):
1/4 cup canola oil (alt: 3 T.)
1/3 cup plain soy milk (alt: 1/2 cup)
1 T. orange juice (or lemon juice)
1 tsp. vanilla
2 T. water

Spread evenly in a greased 8" or 9" square baking dish:
about 4 1/2 cups baking apples (cortland, empire, etc.; about 5 med.-size),
peeled, chopped into 1" slices or chunks

Top apples with:
about 1/4 cup finely chopped walnuts (mixed with 1 tsp. of maple syrup)

Pour batter fairly evenly on top. Gaps are okay; they will mostly be filled when the batter rises.
350 deg., 35 to 40 minutes, until cake is brown on top and apples bubbling.
