pre-heated 350 deg. F. oven, approx. 30-35 minutes
Makes 1 loaf or cake
A) In a medium size bowl, combine well:

1 cup whole wheat pastry flour
1/4 cup unbleached white flour
1/4 cup wheat germ
1/4 cup quick-cooking oats
1/4 tsp. cinnamon (optional)
1 1/2 tsp. baking powder
1/2 tsp. baking soda
1/8 tsp. salt

B) In a large bowl, beat slightly:
1/4 cup canola oil
1/4 cup sugar
1/4 cup coarsely grated apple (peeled or unpeeled, packed)
1 egg, lightly beaten
Add, and mix well:
1 cup mashed ripe banana
2 T. plain soy milk or water
1 tsp. vanilla extract
2 tsp. fresh lemon juice (or orange juice)

Add A into B, stirring gently, until half combined.
Add, then finish combining (don't overmix) :
1/3 cup chopped walnuts
1/3 cup chopped pitted dry dates (pits removed!)

Transfer into an well-greased, approx. 8-inch square baking dish, spread evenly, and bake just until done (a knife inserted into the centre comes out dry).
Let cool for about 10 minutes, then remove from bakeware and let cool completely.
