Makes about 20 three-inch diameter pancakes
In small mixing bowl, combine:
1/2 cup corn flour
1/2 cup whole wheat pastry flour
1 T sugar (white or brown)
1/2 tsp. baking powder
scant 1/2 tsp. baking soda
1/4 tsp. cinnamon

In medium large mixing bowl, combine well:
1 cup plain soy milk
2 tsp. canola oil
1 egg, lightly beaten
1 T orange juice
Add:
1 cup cooked red kidney beans mashed
(fi canned beans, rinse and drain well)

Pour dry ingredients into wet, and combine everything just until batter is evenly moistened.
Using a medium hot, lightly oiled pan, cook pancakes on one side until there are many bubbles and surface is slightly dry. Flip over and cook until that side is brown as well.
