Yield: 12 to 16 3-inch pancakes

In a small bowl, combine:
1/3 cup quick oats
1/2 cup buckwheat flour
1 T. ground flax seed
1/4 tsp. ground cinnamon
1/4 tsp. baking powder
1/8 tsp. baking soda

In a large bowl, combine:
1 cup unsweetened, plain or vanilla soy milk (or another non-dairy milk)
1 T. apple cider vinegar
2 T. maple syrup

Transfer the dry ingredients into the bowl with the wet ingredients, and mix together until everything is evenly combined. Don't overmix.
Medium heat, non-stick or lightly greased pan.
Flip over once, when top becomes dry.
