Makes 2 to 4 servings.
Preheated, 375 deg. F. oven
Total baking time: approx. 30 to 40 minutes
(First 15-20 minutes: covered with alum. foil)
In large bowl, combine:
1/2 small head of cauliflower, chopped into small pieces: 1 1/2 to 2 cups
1 medium potato, peeled, diced: about 1 cup
1/8 cup raw walnuts, finely chopped

In a small bowl, mix together:
1 1/4 tsp. chili powder (add a little bit more if you want it spicier)
1/2 tsp. onion powder
1/2 tsp. sweet smoked paprika
1/4 tsp. coriander
1/4 tsp. regular paprika
1/2 tsp. garlic powder
1/4 tsp. salt
Add to cauliflower mixture and blend well.
- Use a baking dish, approx. 8 x 14 inches.
- Grease dish, or line with parchment paper.
- Spread cauliflower mixture evenly.
- Cover with aluminum foil, bake for about 15 minutes.
- Remove foil, continue baking until tender and slightly brown.
- When slightly cooled, transfer to mixing bowl while still warm.

- add a good handful of chopped cilantro

Additional ingredients for cauliflower filling:
While cauliflower mixture is baking, sauté, until tender:
1/2 sweet bell pepper (orange or yellow), finely chopped
1/2 onion, finely chopped
1 garlic clove, minced
4 to 6 button mushrooms, chopped into small pieces
When done, add to baked cauliflower mixture — either mashed or unmashed.
