Classic white cake


Makes 1 layer

350 deg., pre-heated oven
baking time: approx. 35 minutes

In a small bowl, combine well, and set aside:
 1 1/4 cups all-purpose white flour
 2 tsp. baking powder

In a medium size bowl, cream:
 2 T. butter
 1 egg (free-range!)

Add, and combine well, until smooth:
 2/3 cup white sugar

Gradually mix in:
 2/3 cup plain soy milk (or any other unsweetened, non-dairy milk)

Finally, mix in:
 1 tsp. vanilla extract

Grease well, with butter or margarine, a standard size 1-layer cake pan.

After the oven is pre-heated, add the flour mixture to the wet ingredients
in two stages.

Combine until just evenly blended. Don't overmix!

Pour the batter evenly into the pan.

Bake until slightly golden brown on top, and a toothpick comes out clean.

Let cool.
Icing, to taste. Traditionally: vanilla or chocolate.
