Makes about 5 servings
In large pot, on low-medium heat, sauté for 3 or 4 minutes:
2 tsp. OLIVE OIL
1 cup yellow ONION, chopped

Add, and continuing to sauté for one minute:
1 1/2 cups peeled* POTATO, chopped (about 1-inch pieces)
(*partly peeled if organic)

Add, then bring to a low simmer on medium heat, and cook
until veggies are soft:
5 cups fresh BROCCOLI florets and stalks
(cut off the outer tough, dark green part of the stalks)
3 cups VEGETABLE BROTH
1 small clove of GARLIC, minced

Let cool, then purée.
Optional, add:
salt and black pepper, to taste
approx. up to 1 more cup of water, for a thinner consistency
