350 deg. F., 8-10 min. / Yield: about 2 dozen
1) In large bowl, mix (and slightly beat with fork):
– 4 T. MAPLE SYRUP
– 2 T. SUNFLOWER OIL
– 2 T. PLAIN SOYMILK
– 2 T. MOLASSES
– 1/4 cup minced FRESH GINGER
2) In a medium bowl, combine well:
– 1 1/3 cups FLOUR (half unbl. white, half whole wheat or spelt, or a combination)
– 2 T. GROUND FLAX SEED
– 1/2 tsp. BAKING POWDER
– 1/2 tsp. BAKING SODA
– 1/4 tsp. SALT
3) Mix #2 into #1
Optional: When half mixed together, add:
– 1/4 cup DARK RAISINS
– 1/4 cup chopped BRAZIL NUTS
Then mix everything gently but thoroughly.
TO BAKE:
– Lightly greased baking sheet or parchment paper.
– Form into small, flat cookies.
– Turn baking sheet around once during baking.
– Bake till lightly firm and brown on top.
