Makes about 8 servings.
In large pot, on low-medium heat, sauté for 3 or 4 minutes:
1 T. OLIVE OIL
1 medium ONION, chopped
Add, and continuing to sauté for one more minute:
1 large yellow or white POTATO, peeled (optional),
and chopped in 1.5-inch pieces
Add, and simmer on medium heat, until veggies soft:
5 cups fresh or frozen GREEN PEAS
5 cups VEG. BROTH
Let cool, purée, add salt and black pepper to taste.
