Grain side dish
In a large bowl, combine well:
1 cup white or whole wheat couscous
1/2 cup vegetable stock
1/4 cup hot water
1/2 tsp. dried oregano
1/2 tsp. dried basil
1/2 tsp. dried parsley
Cover completely and let sit 15 minutes.
Uncover and fluff with fork; loosen any clumps.
Set aside.

In a large pan, sauté, for 2 minutes:
1/2 T. canola oil
1/4 sweet red pepper, minced
1/2 stalk of celery, minced
1/2 tsp. fresh garlic, minced
Add, and cook 3 more minutes:
1/2 cup fresh spinach, chopped
1/3 cup green onion, minced
