Gently simmer, until mixture is soft but not mushy, and
liquid is mostly evaporated:
– 1 cup MANGO (or pears), cut into approx. 3/4-inch pieces
– 1/4 cup chopped RED ONION
– 1/6 cup GOLDEN RAISINS
– 1 (to 2) T. LIGHT BROWN SUGAR
– 1 1/2 T. WHITE VINEGAR
– 1 1/2 tsp. finely grated FRESH GINGER
– 1/2 tsp. ground CUMIN
– 1/4 tsp. CINNAMON
– pinch of CELERY SALT
– optional: zest of about 3/4 of one (organic) ORANGE, or lemon
Add small amount of water while cooking, if needed.
Let cool slightly.
Using a hand blender, partly purée, allowing some small chunks to remain
Then stir in:
– optional: 1 1/2 T. finely chopped fresh mint
(Good with vegetable biryani.)
Store in refrigerator.
