Pear streusel coffee cake


350 deg., pre-heated oven
baking time: approx. 25 minutes

In a medium size bowl, combine well, and set aside:
 3/4 cup whole wheat pastry flour
 3/4 cup all-purpose flour
 1/3 cup (scant) white or brown sugar
 1 tsp. baking soda
 1/4 tsp. (rounded) ground nutmeg
 2 tsp. baking powder

Mix in:
 3/4 cup apple juice

Fold in:
 1 1/2 cups pears , (about 2 pears), finely chopped

Grease well, with butter or margarine, an 8-inch square baking dish.

Pour the batter evenly into the baking dish.

Topping:
In a small bowl, combine:
 3 T. brown sugar
 3 T. whole wheat flour
 2 T. quick rolled oats
 2 T. finely chopped walnuts
 2 1/2 tsp. frozen apple juice concentrate, thawed

Dot the top of the cake evenly with the topping, pressing down lightly.

Let cool.
