1) Prepare 1 small red pepper as follows,
or buy a jar of roasted red peppers.
Total amount required for recipe:
1/3 cup
Pre-heat oven to 400 deg. F.
Wash red pepper, pat dry, and place in a shall glass baking dish.
Bake for about 20 min., rotating pepper from time to time, till skin blackens in some places, and starts to loosen from the flesh of the pepper. When cool enough to handle with your fingers, peel the skin. Remove and discard the stem and seeds. Chop red pepper into med.-small pieces.
2) Place red pepper in mixing bowl along with the following ingredients, and blend (with a hand blender), till smooth:
– 1 19-oz. can drained and rinsed CHIC PEAS
– 3 T. TAHINI
– 3 T. fresh LEMON JUICE
