Serves 4
Simmer, about 10 minutes (until fork easily pierces potatoes):
– 6 cups peeled SWEET POTATOES, chopped into medium-sized chunks
– 4 cups WATER (or veg. broth)
Carefully (so there is no splattering) purée in pot with hand blender.
Stir in:
– juice of 2 LIMES
– salt and pepper to taste
Serve with:
– 1 (or more) GREEN ONION, thinly sliced
– 4 T. (or more) chopped FRESH CORIANDER
