3 T. fresh lemon juice
1 clove garlic, minced
1 T. maple syrup
4 T. water
salt, to taste

1/2 cup tahini
juice of 1 lemon
2 cloves garlic, minced
2 tsp. tamari
1 tsp. ground cumin
(optional): dash of cayenne
salt, to taste
Add gradually, until thoroughly blended:
2/3 cup water (add gradually, according to desired thickness)
Stir in:
about 1/4 cup fresh parsley, minced
