350 deg. F., 15-20 min.
Lightly oiled cookie sheet or parchment paper.
Yield: about 16-20 balls (depending on size).
Combine:
1/4 cup + 2 T. brown sugar
1/4 cup plain soy milk (or orange juice, or other liquid)
2 T. brown rice syrup
1 tsp. vanilla extract
1/8 tsp. salt
Mix in, in this order:
1 1/4 cups shredded, unsweetened coconut
1/2 cup whole wheat flour (or white flour)
1/3 cup quick cooking oats
Add (optional):
1/4 cup chocolate chips
1 tsp. lemon or orange zest
The batter should be a little bit moist.
Form into cookies or balls.
