In a medium size soup pot, heat:
1/2 T olive oil
Add, and sauté, until tender (5 to 8 minutes):
1 yellow onion, diced
1 celery stalk, diced
1 carrot, peeled and diced
2 small garlic cloves, minced
Cover pot, and simmer for about 20 minutes:
4 cups veg. broth
2 1/2 cups cooked great northern beans (or cannellini beans)
1 small yellow potato, peeled and chopped (approx. 1-inch pieces)
1/2 (scant) teaspoon sweet smoked paprika
1/4 teaspoon dried thyme
1/4 teaspoon black pepper
1/8 teaspoon dried rosemary
Let cool. Remove about 1/4 of the soup, and set aside.
Purée the rest.
Add the portion that was set aside.
Add salt, to taste.
Add a bit more water or veg. broth if you want a more liquid soup.
